I'm shopping for a couple in their 40s who are pretty established and already own most of the obvious things you'd normally buy as gifts. I'd rather give them one genuinely nice joint Christmas gift than two smaller individual gifts. I'm open to luxury home items, food or wine-related gifts, tech, travel products, experiences or something completely unexpected. What have you given—or received—as a couple that actually felt special?

At a $1,000 budget I would NOT buy them another random luxury object unless you know their taste extremely well.

My favorite couple gift we've received was a hotel stay/gift certificate. It gave us an excuse to actually go somewhere together, and it didn't become another thing sitting in our house.

If you really want a physical gift, Rimowa cabin luggage could be fun if they travel and you know they don't already have good luggage. Another idea is a beautiful Christofle serving piece if they're the type who entertains a lot, but that's much more taste-dependent.
