It turned out and actually felt way more elevated than regular poke bowls. I set the station with pre-cut fish, seasoned rice, nori sheets and various toppings like spicy mayo, scallions, tobiko, etc. The guests assembled each bite themselves and it was a huge success.

Pasta “Build Your Plate” Station
This is my go-to when I want something interactive but still controlled.
I set it up like this:
1) 3 pastas: rigatoni, pappardelle, cheese ravioli
2) 3 sauces: truffle cream, spicy vodka, pesto
3) Add-ons: burrata, chili oil, shaved parm
Try using a warm station like a buffet server warming tray so sauces stay perfect.
